The Late Disgorge is a limited release that was held on lees for seven years before disgorging.  Made from 100% Chardonnay the base wine exhibits zesty citrus notes, lively acidity and a crisp dry finish. The extended time on lees allows the wine to develop more texture and mouthfeel, a finer bead and generally more character and complexity in flavour and aroma.
